Pork, Apple, and Cranberry Scotch Eggs

I’ve made Scotch Eggs (a whole egg covered in pork and breadcrumbs… if you really have to ask) several times in the past in my quest to try and use my chicken’s eggs, but whilst I generally use sausage meat I thought I’d try something different.

Christmas Scotch Eggs!!!

These scotch eggs sound quite fancy but there was a bit of a cheat involved by me and I bought the pork, apple and cranberry stuffing pre-made from Morrisons making it quite an easy recipe to follow.


What you get is the typical savouriness from the egg, pork, and breadcrumbs but with a lovely sweetness from the apple and large pieces of cranberry. I think they sound pretty festive and would be ideal for snacks if you’ve got friends and family visiting this Christmas.

They make a nice change so if you want to give it a go then you can get a good (but simple) recipe here. It involves boiling eggs, coating them in flower, covering them in the pork stuffing surround, then dipping in beaten egg and covered in dried breadcrumbs…. then into a pan of hot oil.
